Moving from the old Taostats API to the new one

This guide is for anyone, person or AI agent, whose code calls the old Taostats API. It lists every old endpoint, the new endpoint that replaces it, and exactly what changes: parameters, response fields and behaviour. Old endpoints with no replacement are listed too, with where the data lives now if anywhere.
